Quality evaluation of frozen and chilled fish: A review

چکیده
As fish is a perishable food item, multiple storage approaches need be considered to extend its shelf-life, safety, and quality. Despite advancements in modern frozen techniques, chilling freezing remain the most frequently employed preservation practices onboard. The purpose of this review outline ways increasing shelf-life fresh by assessing different conventional conditions. Although there are additional elements that determine such as species, harvesting method, stress experienced after being captured, amount ice, temperature, time some important factors. Furthermore, way stored (whole, filleted, or gutted) influences final product Most studies show entire chilled has longer shelf life compared gutted filleted fish. But other facts about it caught, how gets preparedness at industries must taken into account if extended. Meanwhile, could helpful for prolonged quality industrial scale household storage.
